Separate 6 eggs, beat whites till stiff, beat yolks with 3/4 c. (150g) sugar and pinch salt. Fold whites into yolks, add 3/4 c. (100g) matzah cake meal slowly, vanilla extract or frozen OJ concentrate or squeezed lemon. Bake immediately at 425° F (210 C) about 30 mins or until toothpick comes out clean.
Oops, I meant to take a pic of it before I cut it. This one is lemon although I put in the vanilla as well. My grandmother always made strawberry shortcake with it, adding strawberries and whipped cream but the strawberries just are not looking good at the moment.
